MARBLE BAR (INSIDE SYDNEY HILTON) - SYDNEY CBD

Marble Bar
(Basement Level of Sydney Hilton Hotel)
488 George St
Sydey CBD

The iconic Marble Bar under the Hilton Hotel Sydney is back! It's as beautiful, dark, mysterious and captivating as you'd expect - its 1893 heritage beautifully evident. This place has so much charm and atmosphere - it's so unique - almost catacomb-like. It reminded Mlady of the classic and classy Gold Room in The Shining.

We were there for the re-launch of The Marble Bar and it was done in style! They even had a shoe shine stand in the downstairs foyer - very appropriate to its time period feel.

There were signature cocktails freely flowing and canapes endlessly being delivered on platters by helpful staff there.

We of course had live music to entertain the masses with a lively performance from The Dominoes.

We started with a lovely peach puree and champagne drink. Then cocktails - some on offer were the Vesper Martini (vodka and gin based), the Charlie Chaplin (Sloe gin, lime and apricot brandy), an Old Fashioned and a vodka based Moscow Mule. They have other drinks of course - Mlady tried the scotch - a tasty Starward from Victoria and a Springbank 12 year old single malt from Scotland. Sir had an impressive 21year old El Dorado rum from Guyana.

The Marble Bar is elegant and magnificent from the moment you enter it's moody depths. The classic ceilings, the spectacular bar and marble everywhere of course instantly impresses. It's like a secret old world and a perfect place for a drink, or, if you're captivated as we were and can't leave, an entire evening.

Sir and Mlady were guests of The Hilton and The Marble Bar. Special thanks to Rachel Cameron of Sally Burleigh PR for inviting us.

THE LOFT - KING ST WHARF, SYDNEY

The Loft
3 Lime St
King St Wharf
Sydney

The Loft have introduced an impressive high tea on weekends.

You get a mountain of food and unlimited tea together with absolutely amazing views looking out over Darling Harbour past the moorings.

It's hard to know what to do - eat, drink or gaze out over the water!

We had the "high tea with a sweet twist" which includes a Breakfast at Tiffany's cocktail for each person - as well as everything else of course!

The Loft is indulgently relaxing and very comfortable - think big comfy lounges, low tables, big cushions and everywhere - those views!

High Tea is available from midday on Saturday and Sunday and it's decadently good!

To get into The Loft go around to Lime Street and the entrance is at street level. It's just a short flight of stairs and you're there.

The "Breakfast at Tiffany's" cocktails looked great and tasted just as good. You get these at the start of your high tea, before the food arrives. We sat back, sipped away and watched people strolling along the promenade down below us (The Loft is one level up from the wharf providing impressive views) and boats come and go on the harbour.

It was so relaxing and so pleasant!

Of course one of the things everyone looks forward to at a high tea is the food!

This was a traditional high tea in many respects having scones with jam and cream, savoury finger food and sweet treats. It was an impressive range with quantities that were very substantial. We just kept eating and eating and it seemed to keep lasting - it really was a decent sized high tea. We occasionally paused to take in the views - it was hard not to.

You really can't have a high tea without scones - they are such an essential part of the whole thing!

The scones we had were of course freshly baked and arrived nice and warm. The cream was rich and thick but the real killer was the beautiful home made strawberry jam that came with it. It was a good sized serving and it was just so good. We actually overdid it with the jam just to use it all up!

The finger food provided was delicate and delicious. We loved it all and it was a great combination that everyone would love. It all looked so good too - you want a high tea to be impressive when it arrives and this certainly was!

The High Tea at The Loft is possibly not as well known as it should be. The food is impressive and the decor is inviting. Just immerse yourself in one of the comfy lounges, gaze out over Darling Harbour and enjoy the experience. You won't be disappointed.

Sir and Mlady dined as guests of The Loft and The Keystone Group. Special thanks to the manager there, Courtney a'Beckett and to Mel for looking after us so well. Big thanks also to Rita Sadik of Keystone for arranging our visit.

LIVE AT THE CORTILE (INTERCONTINENTAL HOTEL) - SYDNEY

Live at the Cortile
InterContinental Hotel
117 Macquarie St, Sydney CBD

Good food, good drinks and beautiful music in decadent surroundings at very reasonable prices - sound good? Then you need to get along to "Live at the Cortile" at the InterContinental Hotel Sydney. We went in April and again in June. The next one is on 7th August so book early - its absolutely great!

This is just some of the food we had the pleasure of eating on our last visit.

Basically for only $60 per person you get eight items of food each, and a cocktail, and beautiful music in wonderful surroundings!

It doesn't get any better than this! We had six savoury items and two sweet ones - and it's surprisingly filling.
We were listening to music from Brahms and Mozart and eating food matched with the music - how good is this! The next SSO Live at the Cortile Session is on 7 August.

The food is just as good too being in two sets of four items. For the next session Set 1 consists of mushroom/oregano/slow cooked quail egg/brioche/butter; mini French onion soup; salmon en croute; pulled wagyu brisket/chestnut/Heidi Gruyere foam.

Set 2 consists of smoked duck/pumpkin/roasted chestnut; salmon meuniere/leek tart tatin/kale chips.

Then two desserts are hailala vanilla iles flottantes/caramelised almond; cardamon creme brulee.

Then add a champagne cocktail to sip on and you get the picture about the food and beverages - top quality.

Live at the Cortile with the Sydney Symphony Orchestra is an amazing way to spend an evening. We've been twice now - this time with two prize winners from a competition on our site (actually won by their daughter Michelle) - and we had lovely company in Silvio and Nora who were charming.

Sir and Mlady (and Silvio and Nora) were guests of the InterContinental Hotel. Special thanks to Lexi Penfold from Pulse Communications for arranging our visit and the prize!

CHEFS TABLE - CARNIVAL SPIRIT SHIP - OUT OF SYDNEY

Chefs Table
Carnival Spirit Cruise Ship
Out Of Sydney

The Carnival Spirit is a big ship with plenty of food options on board. It's amazing how personal and tailored they can make this considering they have around 2,000 passengers on board. But they do achieve this!

One of the more unique and exclusive choices is the Chef's Table which is limited to just 12 people. It's an experience that is certainly worth it if you get a chance.

Executive Chef Daniel Arulraj runs a big team on board the Carnival Spirit yet still manages to stay involved at a personal level as well. The Chef's Table is an evening of spectacular food and lovely wines in a private room with excellent service and even entertainment. It's also extremely informative as well.

The Chef's Table evening started by meeting in the lounge bar area where we were greeted with a glass of champagne - we were off to a good start already!

We were then taken to the kitchen where Daniel Arulraj meets you all and explains a bit about how the food side of the Carnival Spirit works.

It's a real eye opener as it's a huge operation.

Then, much to our delight, Daniel showed us how they make their delicious warm chocolate melting cake - and to top it off he even gave us the recipe! We're certainly going to give this a go at home.

While in the kitchen we also had canapes. We started with a lovely prime beef taco with avocado cream and tomato salsa.

Then it was some delicious duck pot stickers with a mushroom oyster glaze.

Finally we had my favourite canape - the crayfish and sundried tomato jam fritters. These were amazing!

We then left the kitchen and moved to a private room, with a beautifully decorated table. The first food to arrive after we were seated was a delicious brioche with a whole garlic clove baked into the top. Lovely.

This was closely followed by "Tomatoes Our Way" described as aerated tomato juice, cocoa butter coated and chardonnay poached. It was elegant and tasty.

The Southern Bluefin tuna banh mi was listed in our menu as lemon bread, sesame crisp, miso cream and avocado gel. It was so much more than this though - the textures were so delicate and it was the same with the flavours!

The next dish was spatchcock that was caramelised and came with butternut squash and sofrito. Again presentation was immaculate and the food impeccable.

The Barramundi was again a beautifully presented dish.

It was served with herb pesto, cured tomatoes, carrots, fava, mushroom earth and condensed beets.

The fish was lightly cooked retaining its moisture nicely and we just loved the condensed beets for both their appearance and taste.

Being a red meat eater at heart I absolutely loved the Wagyu.

It was a slow stewed short rib with potato pebbles, pumpkin fudge and tomato dust.

The meat was so soft and tender that it literally fell apart.

Again, as with every dish for the evening, presentation was excellent.

Our final course in this amazing degustation was of course dessert.

The chocolate 32C came with aerated pistachio and mango cake, marscapone cream and guava and caramel praline.

It was a sweet spectacular finale to a wonderful dinner.

During the meal we were fortunate to again hear briefly from Executive Chef Daniel Arulraj and to question him on his food philosophy and his signature dish - which turns out to be a duck creation that we were lucky enough to have specially prepared for us another evening to try! We were also entertained by the magician on the cruise - who was great.

If you get a chance to sign up for the Chef's Table on the Carnival Spirit - do it! It's an absolute bargain and amazing from start to finish!

We'll be posting more details of the food and facilities on the Carnival Spirit - which was really impressive. It was our first cruise and we're now eager to go again!

Sir and Mlady were guests on Carnival Spirit for the Chef's Table. Special thanks to Daniel Arulraj and to Carnival Cruise Line. Thanks also to MG Media Communications for arranging everything so professionally.

THE COTTAGE BAR AND KITCHEN - BALMAIN, SYDNEY

The Cottage
342 Darling St
Balmain, Sydney

The Cottage is almost like a little bit of Surry Hills but transported into Balmain. The place isn't big yet it uses its space so well to create a multitude of different areas to accommodate quite a few customers - and it's charm, drinks and food are attracting plenty of regulars. Set well back from the road in the growing foodie hub of Balmain, it has a front courtyard that almost has an English country garden appearance with tables well spread out under a canopy of leafy branches. There's a long cocktail, wine and beer list to meet most desires. Similarly with the food menu, they have oysters, plenty of very interesting share plates, wood fired pizza's, some delicious cheeses and a few desserts to cap a great night off!

We were there for their Winter menu launch to sample the food and sip their cocktails - tough gig!

The food on offer for the launch was of course samples of their new menu.

It included (pictured at left) mushrooms stuffed with barley, dried fruit herbs and chevre which Mlady devoured , maple and cider beef brisket with celeriac crisps and horseradish cream which had great flavours, oysters served with lemon and Merlot vinaigrette which I enjoyed and finally tasty arancini balls of tomato, smoked mozzarella and Parmesan.
Also available was a lovely Yellowfin tuna tartare that I personally could not get enough of!
We also had roasted cauliflower with pulled lamb shoulder, raisins and vinaigrette (I had two to be honest!). A selection of cheeses were also available and some good ones at that! They had Locheilan Triple ring soft from Shepparton in Victoria, Queso Valdeon blue from Leon in Spain, Wyngaard goats cheese from Woerden in the Netherlands and Fleuron Vache Brebis semi hard from the Pyrenees in France. We were able to sample them all and it was a lovely selection - and just as good for our second serving!

As it was a launch there were also plenty of drinks flowing freely! The drinks menu for the night showcased a few of the favourites from The Cottage. We couldn't resist and tried all three cocktails on offer. First there was the Speyside Sour made from Glenfiddich 12 years old and ginger liqueur extended with lemon juice, honey water and orange bitters. There was also The Sloe Cuban made from Plymouth sloe gin shaken with pressed mint and lime and with soda added.

The final cocktail available for the launch was a Lemon and Basil Gimlet made from citron vodka and lemoncello shaken with fresh basil, lemon and lime.

The Cottage is a lovely spot. It has a comfy charm to it - creating plenty of spaces to sit back and relax in. The drinks are good with plenty to choose from and so is the food which is both interesting and tasty.

Sir and Mlady were invited to the Winter Menu Launch which was a private function. Special thanks to The Cottage and to Olivia Warne and Jo Steuart of Pendulum Communications for inviting us.

THE CORTILE - INTERCONTINENTAL HOTEL - SYDNEY CBD

The Cortile
InterContinental Hotel
117 Macquarie St
Sydney CBD

Fancy a bit of luxury and indulgence? Who doesn't from time to time! Well a visit to the InterContinental Hotel in Sydney for their "Live at the Cortile with the SSO" is a bit of magic that you'll remember for a long time - and best of all it's a series.

The InterContinental Sydney has partnered with the Sydney Symphony Orchestra to put together some lovely soiree's in The Cortile Bar and Lounge (right in the middle of the Hotel).

You can sit back and enjoy beautiful music in lovely surroundings, sip fine drinks (including vintage Moet & Chandon) and eat delicious food designed to match the music - this time it was Argentinian tango. And best of all it's extremely affordable.

Apart from the lovely surroundings of The Cortile, the next thing we were greeted with after we were seated was a glass of 2004 vintage Moet & Chandon. It's such a lovely way to start a sophisticated evening! Then a short while later the five piece section from the Sydney Symphony Orchestra started playing and the outside world just seemed to disappear.

The food, designed to match the music, was in two nicely presented sets.

The first had tasty empanadas - described as empanada Argentina; tortilla de patata con cebolla - potato tortilla with onion; char-grilled chorizo on garlic bread with parsley pesto - lightly spicy and tangy and finally a rich provoleta on ciabatta bread. Even though they were canapes they were actually a good size.

After the first food matching we were served our second drink - this time a martini. It looked as good as it tasted with the subdued light filtering through the glass creating a lovely glow.

The second set of food again came in four portions, but this time two were desserts. We started with Milanesa (a good sized piece of crumbed steak) with salsa blanca then had a lovely Patagonian toothfish with roasted red capsicum. Then the desserts - some of the best churros we've had, with decadent chocolate dipping sauce that Mlady devoured and finally alfajor con dulce de leche - normally biscuits filled with caramel but in this case almost an Eaton mess adaption. So tasty!

It was just so wonderful to sit back and listen to the captivating music of the SSO while tasting delicious food and sipping lovely drinks in such beautiful surroundings!

You get all this for only $50 per person as well (or $25 for the cocktail and the music) - which is outstanding value.

We're keen to return and do this next time!

Sir and Mlady were guests of the InterContinental Hotel. Special thanks to Executive Chef Tamas Pamer for the lovely food and Abigail Murphy - Marketing Manager from InterContinental. Thanks also to Lea and Sophie from Ogilvy Public Relations for arranging our visit.
