The Ternary is a beautifully designed and furnished bar and restaurant inside the Novotel Sydney on Darling Harbour. With cleverly divided spaces to suit the occasion or mood, The Ternary can certainly cater for everyone. We were at The Ternary to experience their cocktail degustation menu - what was unique about this was that the chef, Anthony Flowers, was given the cocktail first, and then created a tapas dish to match! Usually its the other way around so we were excited to see how this worked.
To sate our appetite we had some beautiful naan bread with green mango salsa and raita. This was a great flavour combo and made us excited for more. Our first cocktail arrived, the Terna-rini. Straight away our senses were alight with the intense citrus smell that wafted from the cocktails. These were bright orange,with house infused ginger sugar, vodka, aperol, lemon, passionfruit, rhubarb bitters and topped with a twist of orange peel. This was bold and punchy, we loved it. The accompanying dish was duck buns, peking duck in soft buns. These were generous servings and we loved the contrast of flavour between the buns and cocktails.
Our second cocktail of the night was actually a Pimms carafe! This was full of seasonal fruit and topped with ginger ale. It was fresh, and easy drinking. We were slightly surprised by the accompanying dish, rogan josh. However, once we tried it we understood - this wasn't meant to go easily together - instead it was meant to be a contrast in flavours, kind of like sugar and salt. We loved it! The rogan josh was tender, and had a bit of a kick. It was fresh, fragrant and delicious.
As a surprise, we were also brought lamb ribs to go with our carafe. These ribs were coated in pomegranate molasses, and were simply AMAZING. The lamb fell off the bone. This dish was a winner.
Our final cocktail of the evening was the flower power. This cocktail was beautiful to look at, garnished with edible flowers and a strawberry carved into a rose. The cocktail had vodka, chambord, lychees, lemon, sugar and orange blossom and was simply sweet, and delightful to drink. To accompany was what some may describe as a heavy dish, a complete contrast to the sweet cocktail. It was pulled pepper beef in a crispy pastry, with sauce and a lime to juice things up a bit.
The Ternary provides a beautiful experience, not just for hotel guests, but Sydney-siders seeking a getaway from your standard CBD bar. With stunning views of Darling Harbour and a huge outdoor seating area, we will certainly be back to soak up the great vibes.
