Ruby's Diner has been the darling of Waverley for a while now and still seems to be going just as strong, if not stronger. With a long street front and an indoor-outdoor setting it has just the right amount of urban appeal. It was of course busy on our visit - unsurprisingly.
There were four of us and it was lunch time so the sandwiches grabbed the most attention with all three options on the menu being chosen. The Hambo is of course a ham based sandwich that also has cheese and tomato. It's clearly a more traditional option. The Vego on the other hand is a bit more quirky with roast carrot puree, crushed chickpeas, mint, parsley and feta. Both were big and tasty and arrived quickly after ordering.
The even more substantial lemon garlic chicken thigh came with cabbage, fennel and kale sauerkraut and aioli. It was a big feed and the thick sandwich looked great too.
If you want some of the other dishes on the menu, you could do a lot worse than grabbing the Summer green bibimbap. This was a killer healthy dish made from soft boiled egg, cabbage-cucumber pickle, avocado, broccolini and mixed sprouted chickpeas and mungbeans with tamari-sesame dressing on brown rice pilaf. It was also very filling and packed with flavour and texture variation too.
They do a good coffee here and many just drop by for a brew. We tried both the drinks and the food and left full and satisfied. It's very easy to see why this place is popular.
